Favorite cereal bars recipe!

It was about time for a new post and since spring time is here, i started diet (i know you laugh!) so i am searching all day on pinterest for healthy meals and snacks. What i really love, like most of you, is sugar and this is my biggest problem but to be honest, i am dealing it well so far.

Another issue i had to face was my food during the working hours. I don’t like carrying many things with me but i also had to prepare enough food and snacks so that i won’t fall in a pizza trap (to me this happens easily) and cure my sweet teeth all the time. So i remembered having this conversation with my sister in law, about what to put every day to her daughter’s lunch box for school. I searched a little and what we really liked, among others, was healthy cereal bars! I loved the idea cause i don’t like the ones you can buy and have no idea on what you eat.

I found a lot of great recipes and tried a few enjoying the different combos every time. And after a while, i end up to the best recipe ever for me and all of my friends. It’s a classic recipe with some changes from me in order to keep it as healthy as i could but still to enjoy my superfood snack! It’s super easy and i am sure you will love it too!

Crunchy Granola Bars

Ingredients

  • 2 cups cereal (such as whole grain or rice or all bran or mix)
  • 1 cup oats
  • 1 cup unsalted nuts (such as hazelnuts, pistachios, almonds)
  • ½ cup dried fruit (such as raisins, goji berries, cranberries, or chopped prunes, apricots, dates, mango, papaya, banana, coconut flakes etc.)
  • 1/4 cup flax seed
  • 80 gr. brown sugar
  • 160 gr. honey
  • 50 gr. margarine (i use half of the margarine and 5 tbsp “tahini” which is sesame butter, very healthy but has lots of calories)
  • pinch of salt
  • 1/2 an orange or lemon zest
  • 1 dark and no sugar chocolate

Directions

Grind the nuts into large pieces on the blender, place them in a pan with the oats, bake them in the grill for 5 minutes over medium heat and stir regularly until they evenly get browned. Leave aside to cool and prepare the syrup. In a small pan, add the brown sugar, honey, margarine and orange or lemon zest and wait to boil stirring continuously. Wait until the mixture starts boiling, leave it for 1-2 minutes and then remove it from fire. As the caramel is still very hot, add nuts with oats, flax seed and dried fruit and stir well. Add cereal and stir some more to combine. Cut two sheets of wax paper and use the one to cover your pan. Place the mixture in your pan and press on top with the other sheet of wax paper to create a smooth and flat surface. Melt the chocolate and use a spoon to create lines on the mixture. Place the pan into the freezer and leave it there for 20 minutes. Take it off and cut it in equal bars.
